I planted a garden and grew these. Now what the hell do I do with them?

Am I too late? If you haven’t done anything with these yet… make a frittata!! They’re awesome!
Okay, here’s what you do…
Slice up zucchini and chop up summer squash and saute with 1/2 onion (or shallot or scallion). Slice up a large russet potato or several small ones and saute with the veggies. In a separate bowl, hand whip up 4 eggs and add salt and pepper. Almost done. Then you add the veggie and potato mix into the egg mixtures and fold in. Oil your saute pan again and pour the entire mixture back in. I keep it on medium heat and then use the broiler to finish off the top. Pesto spread on the top is great and so is adding some parmesan. Yumm!
Of course, you don’t have to do this. It actually reheats pretty good in the microwave, believe it or not!

Um… Yum!!! Can’t wait to try that. I made squash & onions to go with the black bean/sweet potato loaf from Lean Grean Cuisine last night, so I’ll have to wait for the next batch. But I’m totally going to try this.
